  • 1 pound Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup dried lentils (green or brown), rinsed and drained
  • 6 cups chicken or vegetable broth
  • 1 14.5-ounce can diced tomatoes, with juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Remove the casings from the sausage (if applicable) and add the sausage to the pot. Cook and crumble the sausage until browned, about 6-8 minutes. Transfer the cooked sausage to a plate and set aside, leaving the rendered fat in the pot.

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.
