  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parmesan cheese, grated (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Add the sausage and cook, breaking it into small pieces with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the pot with a slotted spoon and set aside.
