Cut the chicken thighs into bite-sized pieces and slice the smoked sausage into 1/2-inch rounds.
Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until lightly browned on all sides, about 5-6 minutes. Remove the chicken from the pot and set aside.
