Ingredients

  • 16 ounces Sausage and cheese ravioli
  • 8 ounces Italian sausage (mild or hot, casing removed)
  • 4 large Egg yolks
  • 0.25 cup Heavy cream
  • 0.75 cup Grated Parmesan cheese
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic cloves (minced)
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 4 cups Water

Directions

Step 1

Bring 4 cups of water to a boil in a large pot. Add a generous pinch of salt to the water.

Step 2

Cook the sausage and cheese ravioli according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Step 3

In a medium skillet, heat olive oil over medium-high heat. Add the Italian sausage and cook, breaking it into small pieces, until browned and fully cooked (about 5-7 minutes). Remove the sausage from the skillet and set aside.

In the same skillet, lower the heat to medium and add unsalted butter and minced garlic. Cook the garlic for 1 minute until fragrant.
