Ingredients

  • 2 tablespoons olive oil
  • 4 links sausages (Italian or smoked)
  • 1 large yellow onion
  • 2 medium carrot
  • 2 celery stalks
  • 3 garlic cloves
  • 1 cup black lentils (dry)
  • 4 cups chicken or vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 2 bay leaves
  • 1 teaspoon fresh thyme
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 cups baby spinach (optional)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sausage links and cook until browned on all sides, about 5–7 minutes. Remove the sausages from the pot and set aside.

Step 3

Dice the yellow onion, carrots, and celery. Mince the garlic cloves.

Step 4

In the same pot, sauté the onions, carrots, and celery for 5–7 minutes, or until softened and fragrant.

Add the minced garlic and cook for 1 minute, stirring frequently to prevent burning.

Rinse 1 cup of dry black lentils under cold water and drain.

Slice the browned sausages into thick rounds and return them to the pot.
