Slice the red and green bell peppers into thin strips. Peel and thinly slice the yellow onion. Mince the garlic cloves.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 5-6 minutes. Remove the sausages and set them aside. (They do not need to be fully cooked yet.)
In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the sliced peppers and onion for 5-7 minutes until they start to soften.
