Ingredients

  • 4 links Italian sausage (casings removed)
  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 1 large Onion, diced
  • 2 medium Carrot, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic cloves, minced
  • 14 oz Canned diced tomatoes
  • 2 tbsp Tomato paste
  • 1 cup Beef broth
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 large Potatoes, peeled and cubed
  • 1 cup Shredded cheddar cheese (optional, for topping)
  • 2 tbsp Chopped parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat olive oil in a large skillet over medium heat.

Step 3

Add the Italian sausage (casings removed) and ground beef to the skillet. Cook until browned, breaking up the meat into small pieces with a wooden spoon.

Step 4

Remove the cooked meat and set aside on a plate. Discard any excess grease from the skillet, but leave about 1 tablespoon for sautéing the vegetables.

Step 5

In the same skillet, sauté the diced onion, carrot, and celery over medium heat until softened, about 5-7 minutes.

Step 6

Add the minced garlic and cook for an additional minute until fragrant.

Step 7

Return the cooked sausage and beef to the skillet. Stir in the canned diced tomatoes, tomato paste, beef broth, dried thyme, oregano, salt, and pepper.

Step 8

Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld together.

Step 9

While the sauce simmers, boil the cubed potatoes in a pot of salted water until tender, about 10 minutes. Drain well.

Step 10

Layer the cooked potatoes evenly in the bottom of a large casserole dish.

Step 11

Pour the meat and vegetable mixture over the potatoes, spreading it evenly with a spatula.

Step 12

If desired, sprinkle the top with shredded cheddar cheese.

Step 13

Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling (if used).

Step 14

Remove the casserole from the oven and let it cool for 5 minutes before serving.

Step 15

Garnish with chopped parsley if desired and serve warm.
