Ingredients

  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned Great Northern beans, drained and rinsed
  • 6 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups fresh spinach leaves (optional)
  • 0.25 cup parmesan cheese, grated (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the Italian sausage to the pot. Cook, breaking it into smaller pieces with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.

Step 3

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened.

Step 4

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 5

Add the canned diced tomatoes (with their juices), Great Northern beans, and cooked sausage back into the pot. Stir to combine.

Step 6

Pour in the chicken broth and stir in the Italian seasoning, bay leaf, salt, and black pepper.

Step 7

Bring the soup to a simmer, then reduce the heat to low. Cover the pot and let it simmer for 25 minutes, stirring occasionally.

Step 8

If using spinach leaves, stir them into the soup during the last 5 minutes of cooking until wilted.

Step 9

Remove the bay leaf before serving.

Step 10

Ladle the soup into bowls and garnish with grated parmesan cheese, if desired. Serve hot with crusty bread or your favorite side.
