  • 400 grams canned cannellini beans (drained and rinsed)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet or casserole dish over medium heat.

Step 2

Add the sausages and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove the sausages from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion for 3 minutes until soft and translucent.

Step 4

Add the minced garlic, diced carrot, and diced celery to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
