Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Cut the acorn squashes in half from stem to tip and scoop out the seeds. Brush the cut sides with 1 tablespoon of olive oil, then sprinkle with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper.
