Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 4 breakfast sausage patties
  • 4 croissants
  • 4 cheddar cheese slices
  • 2 tablespoons mayonnaise
  • 2 tablespoons fresh chives (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) to warm the croissants.

Step 2

In a medium bowl, crack the eggs and whisk together with milk, salt, and pepper until blended.

Step 3

Heat a nonstick skillet over medium heat and add 1 tablespoon of butter. Once melted, pour in the egg mixture.

Step 4

Cook the eggs, gently stirring with a spatula, until they are just set and fluffy, about 3-5 minutes. Remove from heat and cover to keep warm.

In another skillet, cook the sausage patties over medium heat for about 3-4 minutes per side, or until they are fully browned and cooked through. Transfer to a plate and cover to keep warm.
