  • 250 g rye flour
  • 250 g bread flour
  • 7 g active dry yeast
  • 300 ml warm water
  • 200 g sauerkraut
  • 10 g brown sugar
  • 10 g caraway seeds
  • 10 g salt
  • 30 g unsalted butter (melted)

Directions

Step 1

In a small bowl, combine warm water and the active dry yeast. Let sit for 5-10 minutes, or until the mixture becomes frothy.

Step 2

In a large mixing bowl, combine the rye flour, bread flour, brown sugar, caraway seeds, and salt. Mix well.

Step 3

Drain the sauerkraut to remove excess liquid and chop it finely. Set aside.

Step 4

Add the yeast mixture, melted butter, and chopped sauerkraut to the dry ingredients. Mix until a rough dough forms.

Step 5

Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes, or until it becomes smooth and elastic.
