Ingredients

  • 1 pound Kielbasa sausage
  • 32 ounces Sauerkraut
  • 1 medium Yellow onion
  • 3 medium Potatoes
  • 2 cloves Garlic
  • 1.5 cups Chicken broth
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Caraway seeds
  • 1 Bay leaf
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Smoked paprika

Directions

Step 1

Slice the kielbasa into 1/2-inch thick rounds and set aside.

Step 2

Rinse the sauerkraut under cold water to reduce its sourness. Squeeze out excess water and set aside.

Step 3

Peel and dice the onion. Peel and chop the potatoes into bite-sized pieces. Mince the garlic.

Step 4

In a large pot or Dutch oven, heat the vegetable oil over medium heat.

Step 5

Add the sliced kielbasa to the pot and brown on both sides, about 5 minutes. Remove the kielbasa and set aside.

In the same pot, add the diced onion and sauté until softened, about 3-4 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Add the sauerkraut to the pot and stir to combine with the onion and garlic mixture.

Remove the bay leaf before serving.
