Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 4 medium russet potatoes, peeled and sliced thinly
  • 2 tablespoons butter, melted
  • 3 cups sauerkraut, drained
  • 2 cans (10.5 ounces each) cream of mushroom soup
  • 0.5 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon caraway seeds (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

Step 2

In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft, about 7 minutes. Drain any excess fat.

Step 3

Season the beef mixture with salt, black pepper, and garlic powder. Stir well and set aside.

Step 4

Peel and thinly slice the potatoes into rounds. Place them in a bowl and toss with the melted butter.

Step 5

Spread half of the potato slices evenly on the bottom of the prepared baking dish.

Step 6

Layer the cooked ground beef mixture evenly over the potatoes.

Step 7

Evenly spread the drained sauerkraut over the beef mixture. Sprinkle with caraway seeds if using.

Step 8

In a medium bowl, mix the cream of mushroom soup and milk until smooth. Pour this mixture evenly over the sauerkraut layer.

Step 9

Top with the remaining potato slices, covering the dish evenly.

Step 10

Cover the baking dish with aluminum foil and bake for 45 minutes in the preheated oven.

Step 11

Remove the foil and sprinkle the shredded cheddar cheese over the top. Return the dish to the oven and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.

Step 12

Let the hotdish cool for 5-10 minutes before serving. Enjoy!
