Ingredients

  • 1 lb Smoked sausage (kielbasa or andouille)
  • 3 cups Sauerkraut
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 2 tbsp Sweet paprika
  • 0.5 tsp Hot paprika (optional)
  • 1.5 cups Chicken or vegetable broth
  • 0.75 cup Sour cream
  • 2 tbsp Flour
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh dill (optional, for garnish)
  • 4 servings Cooked egg noodles or mashed potatoes (for serving)

Directions

Step 1

Slice the smoked sausage into 1/4-inch rounds and set aside.

Step 2

Finely chop the onion and mince the garlic cloves.

Step 3

Heat the vegetable oil in a large skillet or Dutch oven over medium heat.

Step 4

Add the sliced sausage to the skillet and cook until browned on both sides, about 5 minutes. Remove the sausage and set aside.

Step 5

In the same skillet, add the chopped onion and cook until softened and translucent, about 5 minutes.

Step 6

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently to avoid burning.

Step 7

Stir in the sweet paprika and hot paprika (if using) and cook for 30 seconds to bloom the spices.

Step 8

Pour in the chicken or vegetable broth and bring the mixture to a simmer.

Step 9

Add the sauerkraut, browned sausage, salt, and pepper to the skillet. Stir well to combine.

Step 10

Reduce the heat to low, cover the skillet, and let the mixture simmer gently for 20 minutes to allow the flavors to meld.

Step 11

In a small bowl, whisk together the sour cream and flour until smooth.

Step 12

Slowly stir the sour cream mixture into the skillet, cooking for an additional 5 minutes to thicken the sauce.

Step 13

Taste and adjust seasonings if necessary.

Step 14

Serve the sauerkraut and sausage paprikash hot over cooked egg noodles or creamy mashed potatoes.

Step 15

Garnish with fresh dill if desired and enjoy!
