Ingredients

  • 32 ounces Sauerkraut
  • 1 pound Smoked sausage or kielbasa
  • 1 large Yellow onion
  • 1 medium Apple
  • 2 large Garlic cloves
  • 1 cup Chicken broth
  • 1 tablespoon Brown sugar
  • 1 teaspoon Caraway seeds
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the sauerkraut under cold water to reduce its saltiness and tanginess, if desired. Drain well and set aside.

Step 2

Slice the smoked sausage or kielbasa into 1/2-inch rounds. Set aside.

Step 3

Peel and thinly slice the yellow onion. Core and slice the apple into thin wedges. Mince the garlic cloves.

Step 4

In a large bowl, mix together the sauerkraut, onion slices, apple wedges, minced garlic, chicken broth, brown sugar, caraway seeds, and black pepper.

Step 5

Place half of the sauerkraut mixture in the bottom of the crock pot. Layer the sliced sausage on top of the sauerkraut mixture.

Add the remaining sauerkraut mixture on top of the sausage, spreading it out evenly.

Cover the crock pot and cook on LOW for 5-6 hours, or until the sausage is heated through and the flavors have melded together.
