Ingredients

  • 3 tablespoons Olive oil
  • 6 pieces Chicken (bone-in pieces)
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 2 large Tomatoes (diced)
  • 2 tablespoons Tomato paste
  • 2 medium Carrots (julienned)
  • 1 medium Green bell pepper (diced)
  • 2 cups Basmati rice (rinsed and soaked for 30 minutes)
  • 4 cups Chicken broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoons Turmeric
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground cloves
  • 1.5 teaspoons Salt
  • 1 teaspoons Black pepper
  • 0.25 cup Raisins (optional)
  • 0.25 cup Slivered almonds (toasted for garnish)
  • 0.25 cup Cilantro (chopped for garnish)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the chicken pieces to the pot and sear them on each side until browned, about 5-7 minutes per side. Remove the chicken and set aside.

Step 3

In the same pot, add the chopped onion and sauté until soft and golden, about 5 minutes.

Add the minced garlic, diced tomatoes, and tomato paste to the pot. Stir and cook for 2-3 minutes until the mixture thickens slightly.

Add the julienned carrots and diced green bell pepper. Stir to combine and cook for 3-4 minutes.

Stir in the ground cumin, ground coriander, turmeric, ground cinnamon, ground cloves, salt, and black pepper.

Return the chicken to the pot, placing it on top of the vegetable mixture.

Pour the chicken broth into the pot and bring it to a boil.

Drain the soaked basmati rice and add it to the pot. Stir gently to ensure it’s evenly distributed.

Cover the pot, reduce the heat to low, and let the dish simmer for 25-30 minutes, or until both the rice and chicken are cooked through and tender.

If using raisins, sprinkle them over the dish during the last 10 minutes of cooking.

Once done, fluff the rice gently with a fork, taking care not to break the chicken pieces.

Serve the Kabsa hot, garnished with toasted slivered almonds and chopped cilantro.
