Bring a large pot of water to a boil. Carefully peel 12-14 whole cabbage leaves from the head and blanch them in the boiling water for 2-3 minutes until softened. Drain and set aside to cool.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for 4-5 minutes until translucent. Add the garlic and carrot, and sauté for an additional 2 minutes.
