Ingredients

  • 16 ounces frozen mini meatballs
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 12 ounces cheese tortellini
  • 5 ounces fresh spinach
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped
  • 0 grated Parmesan cheese (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrot, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 minute, or until fragrant.

Step 4

Add the frozen meatballs to the pot and cook for 3-4 minutes, stirring to combine them with the vegetables.

Step 5

Pour in the crushed tomatoes and chicken broth. Stir well.

Step 6

Add the dried basil, dried oregano, bay leaf, salt, and black pepper to the pot. Bring to a boil over medium-high heat.

Step 7

Once boiling, reduce the heat to low and simmer for 15 minutes, allowing the flavors to meld.

Step 8

Remove the bay leaf and add the cheese tortellini to the pot. Cook according to the package instructions, typically around 5-7 minutes, until the tortellini is tender.

Step 9

Stir in the fresh spinach and allow it to wilt for 2 minutes.

Step 10

Taste the soup and adjust seasoning with additional salt and pepper if needed.

Step 11

Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese, if desired.

Step 12

Serve hot and enjoy!
