  • 2 pieces New York strip steak

  • 1 teaspoon Black pepper, freshly ground

  • 2 tablespoons Unsalted butter
  • 1 medium Shallot, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Beef stock
  • 0.25 cup Heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the strip steaks dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Warm until shimmering.

Step 3

Place the steaks in the skillet and sear for 3-4 minutes on each side for medium-rare, or longer if desired. Use tongs to sear the edges for 1 minute. Remove the steaks and let rest on a plate covered loosely with foil.
