Slice the pork tenderloin thinly into bite-sized strips. Place the pork in a bowl and add 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well, cover, and let marinate for 10 minutes.
In a small bowl, prepare the sauce by mixing hoisin sauce, oyster sauce, sesame oil, the remaining 1 tablespoon of soy sauce, 1/2 tablespoon of cornstarch, water, and sugar. Stir until smooth and set aside.
