  • 400 grams canned chopped tomatoes
  • 250 milliliters chicken or vegetable stock
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon black pepper
  • 400 grams cannellini beans
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat 1 tablespoon of olive oil in a large, oven-safe pan or casserole dish over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides but not fully cooked through. Remove the sausages and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the pan. Sauté the chopped onion, minced garlic, diced carrots, and sliced celery for 5-7 minutes, or until softened.

Add the diced red bell pepper to the pan and cook for another 3 minutes.
