Ingredients

  • 400 grams elbow macaroni
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cups grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons paprika
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 0.5 cups panko breadcrumbs (optional for topping)
  • 2 tablespoons unsalted butter (melted, for topping)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, melt the 4 tablespoons of unsalted butter over medium heat.

Step 3

Whisk in the flour and cook for about 1 minute, stirring constantly, to form a roux.

Step 4

Gradually pour in the milk and heavy cream, whisking constantly to avoid lumps. Cook for 3–4 minutes, or until the mixture thickens slightly.

Step 5

Reduce the heat to low and slowly add the shredded cheddar, mozzarella, and Parmesan cheeses, stirring until smooth and melted.

Step 6

Stir in the Dijon mustard, paprika, salt, and ground black pepper. Taste and adjust seasonings as needed.

Step 7

Add the cooked macaroni to the cheese sauce and mix until fully coated.

Step 8

If desired, transfer the macaroni and cheese to a greased baking dish. For a crispy topping, mix the panko breadcrumbs with the melted butter and sprinkle evenly over the top.

Step 9

Bake in a preheated oven at 200°C (400°F) for 15 minutes, or until the topping is golden and crunchy.

Step 10

Serve immediately and enjoy your saucy macaroni and cheese!
