Ingredients

  • 3 pounds Chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Crushed tomatoes
  • 1 cup Beef broth
  • 1 cup Red wine
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoons Crushed red pepper flakes
  • 2 sprigs Fresh rosemary sprigs
  • 4 sprigs Fresh thyme sprigs
  • 2 leaves Bay leaves
  • 1 teaspoon Granulated sugar

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Season the chuck roast on all sides with the salt and ground black pepper.

Step 3

Heat olive oil in a large, oven-safe Dutch oven or heavy-bottomed pot over medium-high heat.

Step 4

Sear the roast on all sides until browned, about 4 minutes per side. Remove the roast from the pot and set it aside.

Reduce the heat to medium and add the diced onion. Sauté for 4–5 minutes until softened and translucent.
