Ingredients

  • 4 pieces boneless skinless chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup pineapple chunks (preferably fresh, or canned, drained)
  • 0.25 cup A1 steak sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)
  • 0.25 teaspoon red chili flakes
  • 2 tablespoons green onions (chopped, for garnish)
  • 1 teaspoon white sesame seeds (for garnish, optional)
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Pat the chicken thighs dry with a paper towel. Season both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 4-5 minutes on each side, or until golden brown. Remove from the pan and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the pineapple chunks. Cook for 2-3 minutes until they are slightly caramelized. Remove and set aside.

Step 4

In a small bowl, whisk together A1 steak sauce, soy sauce, honey, minced garlic, grated ginger, and red chili flakes to form the sauce.

Step 5

Return the chicken thighs to the skillet. Pour the prepared sauce over the chicken, ensuring each piece is well-coated.

Step 6

Cover the skillet with a lid and simmer on low heat for 15-20 minutes, stirring occasionally, until the chicken is cooked through (internal temperature reaches 165°F).

Step 7

During the last 5 minutes of cooking, add the caramelized pineapple chunks back to the skillet to heat through.

Step 8

Remove from heat and garnish with chopped green onions and sesame seeds, if desired.

Step 9

Serve the Saucy Chickenaloha A1 hot over a bed of cooked white rice for the perfect tropical-inspired meal.
