Ingredients

  • 1 head Cauliflower
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 Garlic cloves, minced
  • 1 cup Low-sodium tomato sauce
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Chili flakes (optional)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Remove the leaves and stem from the cauliflower, then cut it into bite-sized florets.

Step 3

In a large mixing bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated.

Step 4

Spread the cauliflower evenly on the prepared baking sheet and roast in the preheated oven for 20-25 minutes, flipping halfway, until the florets are tender and golden brown.

Step 5

While the cauliflower roasts, heat a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, adding a splash of water if needed to prevent sticking.

Step 6

Stir in the tomato sauce, paprika, chili flakes (if using), Italian seasoning, and apple cider vinegar. Let the sauce simmer for 5-7 minutes, stirring occasionally, until slightly thickened.

Step 7

Once the cauliflower is roasted, transfer the florets to a serving bowl and pour the hot tomato sauce over them. Toss gently to coat the cauliflower evenly in the sauce.

Step 8

Garnish with fresh chopped parsley and serve warm as a side dish or as a light main course.
