Ingredients

  • 500 ml Lamb stock
  • 150 ml Red wine
  • 2 large Shallots
  • 50 g Butter
  • 1 tbsp All-purpose flour
  • 10 g Fresh mint
  • 5 g Fresh thyme
  • 1 clove Garlic clove
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Finely chop the shallots and garlic clove.

Step 2

In a medium saucepan, melt 25g of the butter over medium heat.

Step 3

Add the chopped shallots and garlic to the pan and sauté until the shallots become translucent, about 3-4 minutes.

Step 4

Stir in the flour and cook, stirring continuously, for about 2 minutes to form a roux.

Gradually add the red wine to the roux, whisking constantly to prevent lumps from forming.

Step 6

Pour in the lamb stock and continue to whisk until the mixture is smooth.

Step 7

Add the sprigs of fresh mint and thyme to the saucepan.

Bring the mixture to a simmer and cook for 20-25 minutes, until the sauce has reduced and thickened.

Strain the sauce through a fine-mesh sieve into a clean saucepan, discarding the solids.
