Ingredients

  • 200 grams Button mushrooms
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 500 milliliters Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon Olive oil
  • 1 clove Garlic (minced)
  • 1 tablespoon Fresh parsley (chopped, optional)

Directions

Step 1

Clean the button mushrooms and thinly slice them.

Step 2

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Step 3

Add the sliced mushrooms to the pan and sauté for 4-5 minutes until softened and lightly browned. Remove from heat and set aside.

Step 4

In the same saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously to create a smooth paste (roux). Cook the roux for 1-2 minutes, ensuring it doesn't brown.

Step 5

Gradually pour in the milk while whisking continuously to avoid lumps. Continue to stir for 5-7 minutes until the sauce thickens and coats the back of a spoon.

Step 6

Stir in the salt, black pepper, and nutmeg. Adjust seasoning to taste.

Step 7

Add the cooked mushrooms into the béchamel sauce and mix well. Allow the sauce to simmer for 2 minutes to meld the flavors.

Step 8

Optional: Garnish with chopped fresh parsley before serving.

Step 9

Serve the Sauce Béchamel Aux Champignons warm over pasta, roasted vegetables, or as a base for casseroles.
