Ingredients

  • 500 grams Chicken thighs
  • 200 ml Coconut milk
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground coriander
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Salt
  • 4 tablespoons Peanut butter (smooth or chunky)
  • 2 tablespoons Lime juice
  • 1 teaspoon Chili sauce (optional, for spice)
  • 50 ml Water
  • 1 tablespoon Vegetable oil
  • 8 pieces Skewers (for grilling)
  • 2 tablespoons Fresh cilantro (for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces (approximately 2 cm cubes).

Step 2

In a mixing bowl, combine coconut milk, soy sauce, brown sugar, ground turmeric, ground coriander, minced garlic, grated ginger, and salt to create the marinade.

Step 3

Add the chicken pieces to the marinade and toss to coat thoroughly. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour (or overnight for best flavor).

Step 4

If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning during grilling.

Step 5

Preheat a grill or grill pan to medium-high heat. Lightly oil the grill grates with vegetable oil to prevent sticking.

Step 6

Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.

Step 7

Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has a slightly charred appearance.

Step 8

While the chicken is grilling, prepare the peanut sauce. In a small saucepan, combine peanut butter, lime juice, chili sauce (if using), water, and a pinch of salt. Heat the mixture over low heat, stirring constantly, until the sauce is smooth and well combined. Adjust the consistency with additional water if needed.

Step 9

Once the chicken skewers are cooked, remove them from the grill and transfer to a serving platter.

Step 10

Garnish the chicken skewers with fresh cilantro and serve immediately with warm peanut sauce on the side for dipping.
