Ingredients

  • 500 g Boneless, skinless chicken thighs
  • 3 tbsp Soy sauce
  • 2 tbsp Sweet soy sauce (kecap manis)
  • 2 tbsp Lime juice
  • 2 tbsp Coconut oil
  • 3 pieces Garlic cloves, minced
  • 1 tsp Ground coriander
  • 1 tsp Ground turmeric
  • 1 tsp Salt
  • 10 pieces Wooden skewers
  • 200 g Peanut butter
  • 100 ml Coconut milk
  • 2 tbsp Brown sugar
  • 1 piece Red chili pepper, sliced
  • 100 ml Water

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent them from burning during grilling.

Step 2

Cut the chicken thighs into bite-sized pieces and set aside.

Step 3

In a bowl, mix together soy sauce, sweet soy sauce, lime juice, coconut oil, minced garlic, ground coriander, ground turmeric, and salt to create the marinade.

Add the chicken pieces to the marinade and mix well to ensure all the pieces are coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

To prepare the peanut sauce, combine peanut butter, coconut milk, brown sugar, and sliced red chili pepper in a saucepan over medium heat. Gradually add water until the sauce reaches your desired consistency.
