Ingredients

  • 120 g smooth peanut butter
  • 200 ml coconut milk
  • 30 ml soy sauce
  • 20 g brown sugar
  • 15 ml lime juice (freshly squeezed)
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 0.5 tsp chili flakes (optional, for spice)
  • 50 ml water

Directions

Step 1

In a medium saucepan over low to medium heat, add the peanut butter and coconut milk. Stir continuously until the mixture becomes smooth and well combined.

Step 2

Add the soy sauce, brown sugar, garlic, ginger, and lime juice to the saucepan. Stir thoroughly to blend all the flavors together.

Step 3

If you prefer a spicier sauce, add the chili flakes and mix them into the sauce.

Step 4

Pour in the water a little at a time, stirring constantly, until the sauce reaches your desired consistency. You may not need all the water.

Step 5

Simmer the sauce gently for about 5-7 minutes, stirring frequently to prevent sticking or burning.

Step 6

Adjust seasoning to taste. If needed, add a touch more lime juice for acidity or brown sugar for sweetness.

Step 7

Remove from heat and let the satay sauce cool slightly before serving. The sauce will thicken as it cools.

Step 8

Serve warm or at room temperature as a dip, marinade, or drizzle over grilled dishes.
