Ingredients

  • 500 grams Ground beef
  • 250 grams Ground pork
  • 100 grams Breadcrumbs
  • 1 large Egg
  • 3 cloves Garlic
  • 1 tablespoon Ginger
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 200 grams Peanut butter (smooth or crunchy)
  • 400 milliliters Coconut milk
  • 1 tablespoon Lime juice
  • 1 teaspoon Fish sauce
  • 1 tablespoon Brown sugar
  • 0.5 teaspoon Chili flakes
  • 2 tablespoons Fresh cilantro
  • 2 tablespoons Neutral oil (for frying)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, egg, minced garlic, grated ginger, 1 tablespoon of soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Step 3

Shape the mixture into small meatballs, about 1 inch in diameter, and place them onto the prepared baking sheet.

Step 4

Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and browned on the outside.

Step 5

While the meatballs are baking, prepare the satay sauce. In a medium saucepan over low heat, combine the peanut butter, coconut milk, lime juice, fish sauce, 1 tablespoon of soy sauce, brown sugar, and chili flakes.

Step 6

Stir the sauce continuously until it is smooth and heated through, about 5-7 minutes. Adjust the seasoning by adding more lime juice or fish sauce, if desired.

Step 7

Once the meatballs are cooked, transfer them to a large skillet. Pour the satay sauce over the meatballs and gently toss them to coat evenly. Cook for an additional 2-3 minutes to allow the flavors to meld.

Step 8

Garnish the meatballs with freshly chopped cilantro before serving.

Step 9

Serve the satay meatballs on their own as an appetizer, or pair them with steamed rice or noodles for a main dish.
