Ingredients

  • 250 grams Peanuts (unsalted, roasted)
  • 400 milliliters Coconut milk
  • 150 milliliters Water
  • 3 pieces Shallots (finely chopped)
  • 4 pieces Garlic cloves (minced)
  • 3 pieces Bird's eye chili (adjust based on spice preference)
  • 2 tablespoons Tamarind paste
  • 2 tablespoons Brown sugar
  • 2 tablespoons Soy sauce
  • 1 teaspoon Salt
  • 2 tablespoons Cooking oil
  • 1 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 piece Lime (for garnish, optional)

Directions

Step 1

Place the roasted peanuts in a food processor or blender and grind them into a coarse or smooth peanut paste, depending on your preference, then set aside.

Step 2

Heat the cooking oil in a medium-sized saucepan over medium heat.

Step 3

Add the chopped shallots, garlic, and bird's eye chilies to the pan. Sauté for 3–4 minutes until fragrant and softened.

Step 4

Stir in the coriander powder and turmeric powder, cooking for 1 minute to release the spices' aroma.

Step 5

Add the peanut paste to the pan, followed by the coconut milk and water. Stir continuously to combine and prevent sticking.

Step 6

Mix in the tamarind paste, brown sugar, soy sauce, and salt. Stir well until the ingredients are fully incorporated.

Step 7

Bring the mixture to a gentle simmer, stirring occasionally. Cook for 10–12 minutes, letting the sauce thicken and flavors meld together.

Step 8

Taste test and adjust seasoning as needed, adding more sugar for sweetness, tamarind paste for tanginess, or chili for spice.

Step 9

Once the sauce is thick and aromatic, remove it from heat and let it cool for a few minutes.

Step 10

Serve warm as a dipping sauce for satay or drizzle over grilled meats, rice cakes, or vegetables. Garnish with a squeeze of lime, if desired.
