  • 1 tsp Fresh ginger (grated)
  • 1 tbsp Lime juice
  • 1 cup Peanut butter (smooth or chunky)
  • 1 cup Hot water
  • 1 tbsp Rice vinegar
  • 1 tbsp Honey
  • 10 Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

In a medium mixing bowl, combine coconut milk, soy sauce, brown sugar, turmeric, coriander, cumin, minced garlic, grated ginger, and lime juice to create the marinade.

Cut the chicken or beef into thin strips or leave shrimp whole. Add your protein of choice to the marinade and mix to coat well. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
