Ingredients

  • 500 grams Ground beef (or chicken or turkey)
  • 75 grams Breadcrumbs
  • 1 large Egg
  • 3 tablespoons Peanut butter (smooth or crunchy)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lime juice
  • 2 cloves Garlic
  • 1 teaspoon Ground ginger
  • 1 teaspoon Brown sugar
  • 2 tablespoons Vegetable oil
  • 0.5 medium Cucumber
  • 1 large Carrot
  • 2 tablespoons Cilantro leaves, chopped
  • 4 pieces Burger buns
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 4 tablespoons Satay sauce (store-bought or homemade)

Directions

Step 1

In a mixing bowl, combine the ground beef, breadcrumbs, egg, 1 tablespoon of peanut butter, soy sauce, minced garlic, ground ginger, salt, and black pepper. Mix thoroughly by hand until all ingredients are well incorporated.

Step 2

Divide the mixture into four equal portions and shape each portion into a burger patty, about 1.5 cm thick. Set aside.

Step 3

Heat a large skillet or grill pan over medium heat. Add the vegetable oil and swirl to coat the surface.

Step 4

Cook the patties for 5-6 minutes on each side, or until they are nicely browned and cooked through. Remove from pan and set aside to rest.

While the patties are cooking, prepare the vegetables by thinly slicing the cucumber and shredding the carrot. Toss the vegetables with the lime juice and chopped cilantro in a small bowl.

If desired, lightly toast the burger buns by placing them cut-side-down in the hot skillet for 1-2 minutes.

Spread 1 tablespoon of peanut butter on the base of each bun. Place a cooked burger patty on top, followed by a spoonful of satay sauce. Add the cucumber and carrot mixture and top with the other half of the bun.
