Ingredients

  • 500 grams beef sirloin
  • 300 grams choy sum
  • 1 cup satay sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons vegetable oil
  • 3 cloves garlic
  • 1 teaspoon cornstarch
  • 3 tablespoons water
  • 1 teaspoon brown sugar
  • 2 stalks green onions
  • 1 piece red chili (optional, for garnish)

Directions

Step 1

Slice the beef sirloin into thin strips, about 1/4-inch thick, and set aside.

Step 2

In a small bowl, mix 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, 1 teaspoon of cornstarch, and 3 tablespoons of water. Stir until smooth, then add to the beef to marinate. Let sit for 10 minutes.

Step 3

Wash and trim the ends of the choy sum. Cut into 2-inch pieces, separating the stems from the leafy parts for even cooking.

Step 4

Mince the garlic and thinly slice the green onions. Slice the red chili into thin rounds if using for garnish.

Step 5

Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Once the oil is hot, add the marinated beef. Stir-fry for 2-3 minutes until the beef is browned and just cooked through. Remove the beef from the wok and set aside.

Step 6

Add the remaining tablespoon of vegetable oil to the wok. Toss in the minced garlic and sauté for 30 seconds until fragrant.

Step 7

Add the choy sum stems to the wok and stir-fry for 1-2 minutes. Then add the leafy parts and cook for another minute until wilted but still bright green.

Step 8

Reduce the heat to medium and return the beef to the wok. Add 1 cup of satay sauce and 1 teaspoon of brown sugar, stirring everything together to coat evenly.

Step 9

Cook for an additional 2-3 minutes, allowing the flavors to meld together and the sauce to thicken slightly.

Step 10

Transfer to a serving dish and garnish with the sliced green onions and optional red chili. Serve hot with steamed rice or noodles.
