Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon sriracha
  • 2 tablespoons pickled jalapeños, finely chopped
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon hot sauce (optional, for extra heat)
  • 0.5 teaspoon red chili flakes, for garnish
  • 1 teaspoon fresh parsley, finely chopped (optional, for garnish)

Directions

Step 1

Place the eggs in a medium-sized pot, cover with cold water, and bring to a boil over medium-high heat.

Step 2

Once the water reaches a rolling boil, cover the pot, turn off the heat, and let the eggs sit in the hot water for 10 minutes.

Step 3

Transfer the eggs to a bowl of ice water to cool completely, about 5 minutes. Peel the eggs carefully and cut each one in half lengthwise.

Step 4

Scoop the yolks into a medium mixing bowl and place the egg whites on a serving platter.

Step 5

Mash the yolks with a fork until smooth. Add the mayonnaise, Dijon mustard, sriracha, pickled jalapeños, smoked paprika, cayenne pepper, salt, and black pepper. Mix until well combined. If you want extra heat, stir in the optional hot sauce.

Step 6

Use a spoon or a piping bag to fill the hollows of the egg whites with the yolk mixture.

Step 7

Sprinkle the filled eggs with red chili flakes for garnish. Optionally, add a touch of fresh parsley for a pop of color.

Step 8

Refrigerate the eggs for at least 15 minutes to let the flavors meld, or serve immediately if desired.
