Ingredients

  • 4 pieces Pork loin cutlets
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika
  • 2 large Eggs
  • 2 tablespoons Milk
  • 2 cups Panko breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 whole Zest of 1 lemon
  • 1 cup Vegetable oil (for frying)
  • 2 tablespoons Fresh parsley (for garnish)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Place each pork loin cutlet between two pieces of plastic wrap and pound them with a meat mallet or rolling pin until they are about 1/4 inch thick. Remove the plastic wrap and set aside.

Step 2

Set up a breading station by preparing three shallow bowls. In the first bowl, mix the flour with salt, black pepper, and smoked paprika. In the second bowl, whisk together the eggs and milk. In the third bowl, combine the panko breadcrumbs, Parmesan cheese, and lemon zest.

Step 3

Coat each pork cutlet in the seasoned flour, shaking off any excess. Then dip it into the egg mixture, ensuring it is fully coated. Finally, press it into the breadcrumb mixture, making sure it is evenly covered. Repeat with all cutlets and set them aside on a plate.

Step 4

Heat the vegetable oil in a large skillet over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a breadcrumb into it; if it sizzles, the oil is ready.

Step 5

Carefully place 1-2 schnitzels into the skillet (do not overcrowd the pan) and fry for about 3-4 minutes on each side or until golden brown and crispy. Use tongs to flip them as needed.

Step 6

Transfer the cooked schnitzels to a plate lined with paper towels to drain any excess oil and keep them warm in a low oven. Repeat with the remaining schnitzels.

Step 7

Serve the schnitzels immediately, garnished with chopped fresh parsley and lemon wedges on the side for squeezing over the top.
