  • 4 cups Saskatoon berries (fresh or frozen)
  • 0.75 cup Granulated sugar
  • 0.33 cup All-purpose flour
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 1 tablespoon Butter (unsalted)
  • 1 set Prepared double pie crust (homemade or store-bought)
  • 1 large Egg (for egg wash)
  • 1 tablespoon Water (for egg wash)
  • 1 tablespoon Coarse sugar (for topping, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

If using fresh Saskatoon berries, rinse and remove any stems. If using frozen berries, allow them to thaw and drain any excess liquid.

Step 3

In a large bowl, combine the Saskatoon berries, granulated sugar, all-purpose flour, cornstarch, cinnamon, salt, and lemon juice. Mix well to coat the berries evenly and set aside.

Step 4

Roll out one half of the pie crust on a floured surface to fit a 9-inch pie dish. Carefully transfer the crust into the dish, trimming any overhanging edges.

Pour the prepared berry mixture into the pie crust. Dot the filling with small pieces of butter to enhance richness.
