  • 6 cups Chicken broth
  • 15 ounces Diced tomatoes, canned
  • 1.5 cups Corn kernels, frozen or fresh
  • 15 ounces Black beans, canned and rinsed
  • 2 tablespoons Fresh lime juice
  • 2 cups Tortilla strips
  • 0.25 cup Fresh cilantro, chopped
  • 1 large Avocado, diced
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add diced onion, garlic, and jalapeño. Sauté for 3-4 minutes until softened and fragrant.
