Ingredients

  • 1 loaf Pide bread
  • 2 cans Canned sardines in olive oil
  • 0.5 cups Grated Parmesan cheese
  • 0.5 cups Kalamata olives
  • 0.5 cups Green olives
  • 2 tablespoons Capers
  • 2 cloves Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Lemon juice
  • 3 tablespoons Extra-virgin olive oil
  • 0.5 cups Cherry tomatoes
  • 0.25 teaspoons Freshly ground black pepper
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Slice the pide bread into 8 rectangular pieces and lay them flat on a parchment-lined baking sheet.

Step 3

Lightly brush each piece of pide with 1 tablespoon of olive oil and set aside.

In a food processor, combine Kalamata olives, green olives, capers, garlic cloves, parsley, lemon juice, and 2 tablespoons of olive oil. Pulse until the mixture forms a coarse paste to make the olive tapenade.
