Ingredients

  • 300 g all-purpose flour
  • 7 g instant yeast
  • 30 g sugar
  • 5 g salt
  • 180 ml milk
  • 40 g unsalted butter
  • 125 g canned sardines in oil
  • 1 medium onion
  • 2 cloves garlic
  • 15 g tomato paste
  • 2 g black pepper
  • 1 large egg
  • 15 ml water

Directions

Step 1

In a large bowl, combine the flour, instant yeast, sugar, and salt. Mix well.

Step 2

Warm the milk slightly until it's just above room temperature, not hot.

Step 3

Add the warm milk to the flour mixture, followed by the unsalted butter.

Step 4

Knead the mixture together until a smooth and elastic dough is formed, about 10 minutes.

Cover the bowl with a damp cloth and let the dough rise in a warm place until it doubles in size, about 1 hour.

While the dough is rising, prepare the sardine filling. Drain the sardines, removing any excess oil.

In a pan over medium heat, sauté the finely chopped onion and minced garlic until the onion is soft.

Add the drained sardines and break them apart with a spatula. Stir in the tomato paste and black pepper. Cook for an additional 5 minutes, then set aside to cool.
