Ingredients

  • 2 lbs sweet potatoes
  • 1 tbsp fresh ginger
  • 2 tbsp butter
  • 0.25 cup heavy cream
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 cups water

Directions

Step 1

Peel and cube the sweet potatoes into 1-2 inch pieces for even cooking.

Step 2

Peel and finely grate the fresh ginger using a microplane or small grater.

Step 3

In a medium-sized pot, bring 4 cups of water to a boil. Add the sweet potato cubes and a pinch of salt.

Reduce the heat to medium and simmer the sweet potatoes for about 15-20 minutes, or until they are fork-tender.
