  • 6 medium (about 2.5 lbs) Russet potatoes

  • 3 cups Whole milk
  • 2 cups (shredded) Sharp cheddar cheese
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 cup (grated) Parmesan cheese
  • 1 medium (thinly sliced) Yellow onion
  • 3 tablespoons Panko breadcrumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or non-stick spray.

Peel the potatoes and slice them into 1/8-inch-thick rounds using a mandolin slicer or a sharp knife. Set aside in cold water to prevent browning.

Step 3

In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour to create a smooth roux. Cook for 1-2 minutes, whisking constantly, until the mixture is golden.
