Ingredients

  • 12 ounces spaghetti
  • 1 pound shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 0.5 teaspoons crushed red pepper flakes
  • 1.5 cups cherry tomatoes (halved)
  • 0.5 cups white wine
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.25 cups parmesan cheese (grated)
  • 2 tablespoons parsley (chopped, for garnish)
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the spaghetti aside.

Step 2

Pat the shrimp dry with paper towels and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and red pepper flakes, and sauté for 30 seconds until fragrant.

Step 5

Stir in the halved cherry tomatoes and cook for about 5 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

Step 6

Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to cook off and the sauce to reduce slightly.

Step 7

Add the cooked spaghetti to the skillet, along with the reserved pasta water, lemon juice, and half of the grated parmesan cheese. Toss everything together to coat the spaghetti evenly.

Step 8

Return the cooked shrimp to the skillet and toss gently to combine. Cook for an additional 1-2 minutes until the shrimp are warmed through.

Step 9

Season with the remaining salt and black pepper, adjusting to taste. Remove from heat.

Step 10

Garnish with the remaining parmesan cheese and chopped parsley. Serve immediately and enjoy!
