Ingredients

  • 450 grams Large shrimp, peeled and deveined
  • 200 grams Fresh spinach
  • 8 cups Day-old baguette or sturdy bread
  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced
  • 6 large Eggs
  • 2 cups Milk
  • 1 cup Heavy cream
  • 1.5 cups Gruyere cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg, freshly grated

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

Tear or cut the day-old bread into bite-sized cubes and spread them evenly in the prepared baking dish.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of olive oil and 1 tablespoon of butter.

Step 4

Add the peeled and deveined shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet, coarsely chop, and set aside.

Step 5

In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for 30 seconds until fragrant, then add the spinach.

Step 6

Cook the spinach until wilted, about 2-3 minutes, then remove from heat and set aside.

Step 7

In a mixing bowl, whisk together the eggs, milk, heavy cream, salt, black pepper, and nutmeg until fully combined.

Step 8

Evenly layer the cooked shrimp and sautéed spinach over the bread cubes in the baking dish.

Step 9

Pour the egg mixture over the bread, shrimp, and spinach, ensuring that all the bread pieces are soaked.

Step 10

Sprinkle the shredded Gruyere cheese and grated Parmesan evenly over the top of the strata.

Step 11

Cover the casserole with aluminum foil and let it sit at room temperature for 15 minutes to allow the bread to absorb the custard.

Step 12

Bake the strata, covered, in the preheated oven for 30 minutes. Then, uncover and bake for an additional 15-20 minutes, or until the top is golden and the custard is set.

Step 13

Remove from the oven and let cool for 5-10 minutes before slicing and serving. Enjoy your Sarasota's Spinach and Shrimp Strata!
