  • 4 cups Chicken or vegetable broth
  • 3 15-ounce cans Cannellini beans, drained and rinsed
  • 2 cups Rotisserie chicken, shredded (optional for non-vegetarian version)
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 0.25 cup Fresh cilantro, chopped
  • 2 tablespoons Lime juice
  • 1 large Diced avocado (for garnish)
  • 0.5 cup Shredded cheese (cheddar or Monterey Jack, optional)
  • 0.25 cup Sour cream (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
