Ingredients

  • 4 pieces Bone-in, skin-on chicken thighs
  • 2 medium Yellow onion
  • 2 medium Apples (such as Honeycrisp or Fuji)
  • 3 cloves Garlic cloves
  • 3 tablespoons Olive oil
  • 1 tablespoon Fresh rosemary
  • 1 tablespoon Fresh thyme
  • 0.5 teaspoon Ground cinnamon
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.5 cup Chicken broth
  • 1 tablespoon Honey
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the onions and slice them into thick wedges. Core the apples and cut them into similar-sized wedges. Mince the garlic.

Step 3

In a large mixing bowl, toss the onion and apple wedges with 2 tablespoons of olive oil, half of the rosemary, half of the thyme, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.

Place the seasoned onions and apples in a large ovenproof baking dish or skillet, spreading them out evenly.

Pat the chicken thighs dry with paper towels, then season them on both sides with 1 teaspoon of salt, 0.75 teaspoon of black pepper, and a sprinkle of cinnamon.

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down for 4–5 minutes, or until the skin is golden and crispy. Flip and sear the other side for 2–3 minutes.
