Preheat your oven to 400°F (200°C).
Peel the onions and slice them into thick wedges. Core the apples and cut them into similar-sized wedges. Mince the garlic.
In a large mixing bowl, toss the onion and apple wedges with 2 tablespoons of olive oil, half of the rosemary, half of the thyme, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.
Place the seasoned onions and apples in a large ovenproof baking dish or skillet, spreading them out evenly.
Pat the chicken thighs dry with paper towels, then season them on both sides with 1 teaspoon of salt, 0.75 teaspoon of black pepper, and a sprinkle of cinnamon.
