Ingredients

  • 2 tablespoons olive oil
  • 4 links chicken sausages (sliced into 1/2 inch pieces)
  • 1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium yellow onion (diced)
  • 3 cloves garlic cloves (minced)
  • 2 medium carrots (peeled and diced)
  • 2 15-ounce cans canned white beans (drained and rinsed)
  • 2 cups chicken broth
  • 1 14.5-ounce can diced tomatoes (with juice)
  • 1 teaspoon fresh thyme (chopped, or 1/2 tsp dried thyme)
  • 2 tablespoons fresh parsley (chopped, optional, for garnish)
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons unsalted butter (melted)

Directions

Step 1

Heat the olive oil in a large, oven-safe skillet or Dutch oven over medium-high heat.

Step 2

Add the sliced chicken sausages and cook until browned, about 3-4 minutes. Remove and set aside.

Step 3

In the same skillet, add the chicken thigh pieces. Season with salt and pepper and cook until browned on all sides, about 5-6 minutes. Remove and set aside with the sausages.

Step 4

Add the diced onion to the skillet and sauté until softened, about 4 minutes. Stir in the garlic and carrots and cook for another 2 minutes.

Step 5

Stir in the white beans, chicken broth, diced tomatoes, and thyme. Return the chicken and sausages to the skillet, stirring to combine.

Step 6

Bring the mixture to a simmer, then reduce the heat and let it cook uncovered for 15 minutes to allow the flavors to meld.

Step 7

Meanwhile, in a small bowl, combine the panko breadcrumbs with melted butter.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Sprinkle the breadcrumb mixture evenly over the cassoulet. Transfer the skillet to the oven and bake for 12-15 minutes, or until the topping is golden and crisp.

Step 10

Remove from the oven, garnish with fresh parsley if desired, and serve hot.
