Directions

Step 1

In a small saucepan, combine 1 cup of water, the granulated sugar, and the ginger slices. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved (about 5 minutes). Remove from heat, let it cool completely, and then strain out the ginger slices to create a ginger-infused syrup. Set aside.

In a blender, combine the diced mango and 1 cup of water. Blend until smooth, then strain the mixture through a fine-mesh sieve or cheesecloth to remove any pulp, creating a smooth mango puree.
